Clearer settings audit log

Every Event Explorer settings row now spells out exactly what changed, with units. New 'Who' column shows which member of your team made the change.

Before: cryptic rows like '0 → 24' with the generic message 'A setting was changed by the merchant.' Now: 'Hold window, hours: 0 hours → 24 hours', 'Storefront language: English → Dutch'. Per-staff name attribution coming next; for now the column shows the shop owner for in-Tacey changes, 'Shopify (system sync)' for Shopify-driven changes, and 'Tacey support team' for changes our team makes on your behalf.
